Steps

  1. If your watermelon has been in the fridge, pull it out 15 minutes before assembling — the flavor is better when it's not ice-cold. Cut the watermelon into 1-inch cubes, discarding any seeds you encounter. You should have about 6 cups.
  2. In a large serving bowl or platter, arrange the watermelon cubes. Crumble the feta cheese evenly over the top — don't toss yet, or the feta will dissolve into pink slurry.
  3. Scatter the torn mint leaves over the watermelon and feta. If using the red onion, scatter the slices now.
  4. Drizzle the olive oil and lime juice over everything. Finish with the flaky sea salt and a few cracks of black pepper. Give it one gentle toss right before serving — just enough to distribute, not enough to break up the watermelon.

Storage
