Steps
- In a small bowl, stir together Greek yogurt, honey, and vanilla until smooth.
- In 4 glasses or bowls, layer: ¼ cup yogurt on the bottom, then a spoonful of granola, then a layer of fruit. Repeat with another layer of each.

Make Ahead

Storage
Assembled parfaits don't store — the granola turns to mush. Keep components separate: yogurt mixture in the fridge, granola at room temperature, fruit prepped in the fridge.
Substitutions
Any yogurt works: skyr, labneh, coconut yogurt for dairy-free. Compote or jam swirled into the yogurt replaces fresh fruit in winter. Crushed graham crackers or crushed biscotti can stand in for granola.
