Bento Box Lunch
A bento box isn't one recipe — it's a formula you can remix every day without ever turning on the stove. The idea is simple: fill the compartments of a divided lunch container with a protein, a carb, a fruit, a vegetable, and something fun. Everything is assembled cold from fridge and pantry staples. Once you learn the categories, packing lunch takes less than 5 minutes.

- PROTEIN (pick 1): hard-boiled egg, sliced; deli turkey or ham; cheese cubes; hummus; edamame; cubed tofu; tuna pouch; rotisserie chicken
- CARB (pick 1): crackers; pita chips; pretzels; mini bagel; breadstick; cold cooked pasta; rice cakes
- FRUIT (pick 1): grapes; apple slices (tossed in lemon juice); clementine segments; berries; melon cubes; dried fruit mix
- VEGETABLE (pick 1): baby carrots; snap peas; cucumber rounds; cherry tomatoes; bell pepper strips; celery sticks
- TREAT (optional, pick 1): a few chocolate chips; a small cookie; trail mix; yogurt-covered raisins; granola bar bite
- DIP or SAUCE (pick 1): ranch dressing; hummus; tzatziki; peanut butter; guacamole cup; honey mustard
- 1 divided bento-style lunch container with compartments or silicone muffin liners

Steps
- Choose one item from each category — protein, carb, fruit, vegetable, and an optional treat and dip. The key to a good bento is variety in color, texture, and flavor so every compartment has something different.
- Prep each item: wash and dry all produce, slice fruits and vegetables into bite-size pieces, cube cheese or protein if needed. If packing apple or pear slices, toss them in a splash of lemon juice to prevent browning.
- Pack dry items (crackers, pretzels, dried fruit) first so they don't touch anything wet. If your container doesn't have dividers, use silicone muffin liners to create separate compartments. Place any dip in a small lidded container tucked into one section.
- Arrange everything with color contrast in mind — red tomatoes next to orange cheddar cubes, green grapes next to yellow bell pepper strips. Eating with your eyes is half the fun.
- Seal the container tightly, pack a cold pack underneath, and refrigerate until morning. Everything is eaten cold or at room temperature.
Tips & Variations
Make Ahead
Prep components for the whole week on Sunday: wash and dry produce, slice vegetables, cube cheese and protein, portion dips into small containers, and bag up crackers, pretzels, or dry snacks. Store each category in its own container in the fridge or pantry. In the morning, assembly takes 3 minutes — just grab and pack from your prepped station.
Storage
Assembled bento boxes keep in the fridge for 1 day (pack the morning of). Prep components separately keep 4-5 days for most produce and proteins, except avocado which browns within hours. Store crackers and crunchy items separately until packing time so they stay crisp.
Substitutions
For a vegetarian box: pick hummus, cheese, edamame, or tofu as your protein. Gluten-free? Choose rice cakes, gluten-free crackers, or skip the carb compartment and double up on veggies. Dairy-free? Skip the cheese and use hummus as the protein. For a breakfast bento, swap protein for yogurt, carb for granola, and fruit for fresh berries — use the dip cup for a little honey.
