Vanilla Cupcakes with Buttercream
Room-temperature ingredients are the difference between a light, tender cupcake and a dense one — cold eggs and butter won't emulsify properly. Cream the butter and sugar until genuinely pale and fluffy, not just combined. The buttercream should be whipped until it holds stiff peaks and tastes more like butter than sugar.

- 1 cup granulated sugar (200 g)
- 1½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, softened, room temperature (113 g; for cake batter)
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract (divided: 1½ teaspoons for batter, ½ teaspoon for buttercream)
- ¾ cup whole milk, room temperature
- 1 cup (2 sticks) unsalted butter, softened, room temperature (227 g; for buttercream)
- 3½ cups powdered sugar (sifted)
- 2 to 3 tablespoons heavy cream
- 1 pinch salt

Steps
- Preheat oven to 350°F. Line a 12-cup standard muffin pan with paper cupcake liners.
- In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, granulated sugar, baking powder, and salt. Mix on low speed for 30 seconds to distribute evenly.
- Add the ½ cup softened butter to the dry ingredients. Mix on low speed until the mixture resembles fine wet sand with no visible butter pieces, about 1 minute.
- In a liquid measuring cup, whisk together the eggs, 1½ teaspoons vanilla extract, and milk. With the mixer on low, pour the liquid mixture into the flour-butter mixture in a slow, steady stream. Increase speed to medium and beat until smooth and creamy, 1 minute. Scrape down the bowl and beat for 15 seconds more.
- Divide the batter evenly among the 12 cupcake liners, filling each about two-thirds full. Bake until a toothpick inserted into the center of a cupcake comes out clean, 18 to 20 minutes. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.
- For the buttercream, place the 1 cup softened butter in a stand mixer fitted with the paddle attachment (or use a large bowl with a hand mixer). Beat on medium-high speed until pale, light, and fluffy, about 3 to 4 minutes, scraping down the bowl halfway through.
- Add the sifted powdered sugar 1 cup at a time, mixing on low to combine after each addition, then increase to medium-high and beat for 1 minute after all the sugar is added. Add the remaining ½ teaspoon vanilla extract, the pinch of salt, and 2 tablespoons heavy cream. Beat on medium-high until light and billowy, another 2 minutes. If the frosting is too stiff, add the remaining tablespoon of cream a little at a time until the desired piping consistency is reached.
- Frost the completely cooled cupcakes using a piping bag fitted with a star tip or an offset spatula. Serve at room temperature.

Make Ahead
Bake the cupcakes up to 1 day ahead, cool completely, and store in an airtight container at room temperature. Make the buttercream the same day. Frosted cupcakes can sit at room temperature for up to 4 hours before serving; refrigerate for longer storage.
Storage
Store frosted cupcakes in an airtight container in the refrigerator for up to 3 days. Bring to room temperature for 30 minutes before serving so the buttercream softens. Unfrosted cupcakes freeze well for up to 2 months, wrapped tightly in plastic.
Substitutions
For a chocolate variation, replace ¼ cup of the flour with unsweetened cocoa powder and add 2 tablespoons of hot coffee to the milk mixture. For a cream cheese frosting, swap half the butter in the buttercream with an equal weight of full-fat cream cheese and omit the cream.
