Crispy Roasted Potatoes

Crispy on the outside, creamy on the inside — these roasted potatoes get their golden crust from a hot sheet pan and a light coating of oil. No parboiling required. A quick toss with fresh herbs right out of the oven keeps the flavors bright.

Ingredients

  • 2 pounds Yukon Gold potatoes, scrubbed and cut into 1½-inch chunks
  • Kosher salt
  • ½ teaspoon baking soda
  • ¼ cup olive oil or neutral oil
  • 3 cloves garlic, smashed (optional)
  • Freshly ground black pepper
  • 2 tablespoons chopped fresh rosemary or parsley (optional)

Steps

  1. Preheat oven to 450°F with a rack in the lower third. Place potatoes in a large pot and cover with cold water by 2 inches. Add 1 tablespoon salt and the baking soda. Bring to a boil and cook until potatoes are just fork-tender on the outside but still firm in the center, about 7–10 minutes.
  2. Drain potatoes in a colander and let them steam-dry for 2 minutes. Return to the pot, cover with the lid, and shake vigorously to rough up the edges. The rougher, the crispier.
  3. Pour oil onto a large rimmed baking sheet. Add potatoes, garlic if using, and plenty of pepper. Toss to coat and spread in a single layer, cut sides down.
  4. Roast for 20 minutes. Flip each potato piece and continue roasting until deeply golden and crackling-crisp, 20–25 minutes more.
  5. Toss with fresh herbs if using and a final pinch of salt. Serve immediately.

Tips & Variations

Make Ahead

Parboil and rough up the potatoes up to 4 hours ahead. Leave them at room temperature on the baking sheet. Roast just before serving.

Storage

Potatoes lose their crispness in the refrigerator. Reheat leftovers on a baking sheet at 400°F for 10 minutes to re-crisp. Best eaten within 2 days.

Substitutions

Russet potatoes work — they get even crispier but the interior is drier. For duck-fat potatoes, replace oil with an equal amount of rendered duck fat. Smoked paprika added with the oil gives a deep, smoky version.
