Chili Crisp Popcorn
Popcorn is the ultimate snack canvas, and chili crisp transforms it into something unforgettable. The oil soaks into the warm kernels, carrying chili flakes and crunchy shallot-garlic bits into every crevice, while a dusting of nutritional yeast adds a cheesy, savory note that rounds everything out. It's spicy, crunchy, salty, and completely addictive. Make this for movie night and watch it disappear before the opening credits.

Steps
- In a large heavy-bottomed pot with a lid, heat the 3 tablespoons neutral oil and 3 popcorn kernels over medium-high heat. Cover.
- When the 3 test kernels pop, the oil is ready. Add the remaining popcorn kernels in an even layer. Cover immediately and remove from heat for 30 seconds (this lets all kernels come to the same temperature — fewer unpopped ones).
- Return to medium-high heat. Shake the pot occasionally as the popcorn pops. When the popping slows to 2–3 seconds between pops, remove from heat and let sit covered for 30 seconds to catch any late poppers.
- Pour the hot popcorn into a large bowl. Drizzle the chili crisp over the top — focus on the oil for even distribution, then spoon the crunchy solids over specific spots.
- Sprinkle with nutritional yeast and salt. Toss with two large spoons or your hands (careful, it's hot) until every kernel is coated. Taste and add more salt or chili crisp if needed. Serve immediately.
Tips & Variations
Make Ahead
Pop the popcorn up to 2 hours ahead and keep it in a loosely covered bowl at room temperature. Add the chili crisp and seasonings just before serving so it stays crunchy.
Storage
Chili crisp popcorn is best eaten fresh. Stored in an airtight container at room temperature, it stays passable for 1 day, but the crunch degrades as the oil absorbs.
Substitutions
Air-popped or microwave popcorn work fine — just use the chili crisp as a drizzle instead of a cooking fat. Nutritional yeast gives a vegan cheesy flavor; use finely grated Parmesan for the dairy version. Add a drizzle of honey or maple syrup for a sweet-spicy kettle corn variation. Swap chili crisp for chile crunch or sambal oelek with fried shallots if needed.
